What’s Cooking? Chicken Piccata w/Roasted Green Beans

Chicken is honestly one of my favorite meats to cook.   It is works well with just about any cuisine, and cook’s in a relatively short amount of time.

This recipe is a staple in our home, it has simple ingredients (OK, that I typically have on hand!) and can be prepped AND served within 30 minutes!  How can you not love that alone?!  On top of it, my toddlers even love this dish.   You will see over time that my menus rarely have a starch as a side item ~ I believe I ate enough in my younger years growing up in the Midwest that I can miss a few! :)    Really, I try to keep my starches/carbohydrates contained to my breakfast & lunch menus so that I have more time to wear off the sugars that are attached to them.

I recommend before any meal that you pull out ALL ingredients that are on the menu.  Anything that requires to be cleaned, chopped, etc. should be done before a burner is turned on (other than preheating the oven of course).   This may require a few extra dishes to set or lay the items out, but it will save you more time and more importantly stress in finding where the next ingredient is.   Trust me that it will make cooking more enjoyable!

The chicken in this recipe cooks up quite fast.  Start to finish about 15-20 minutes at most.   So I highly recommend that you start with the green beans ~ when they are 5 mins into the cooking time, fire up the burner for the chicken.  I typically cut back on the butter and I don’t miss it too much.

Chicken Piccata

8 Small Boneless Chicken Cutlets,-Pounded To Equal Thickness
1 Cup all-purpose flour
1/4 Cup oil (I use olive)
1/4 Cup fresh lemon juice
2 Tbl capers, drained
1/2 Cup dry white wine
2 Tsp Garlic, Fresh, Minced
1 Cup chicken broth
1/4 Cup unsalted butter
Fresh lemon slices, Optional

1. Season cutlest with salt and pepper, then roll in flour. Tap off excess flour.
2. Coat a saute pan with non-stick spray, add oil, and heat over medium-high.
3. Saute cutlets 2-3 minutes on one side. Flip and saute the other side for 1-2 minutes with the pan covered.
4. Transfer cutlets to a warm plate and cover to keep warm.
5. Pour off any fat in pan and deglaze pan with wine, using a spatula to remove all bits. Add minced garlic & cook until garlic
is slightly brown and liquid is nearly evaporated, about 2 minutes.
6. Add broth, lemon juice, and capers.
7. Return cutlets to pan and cook on each side for a minute. Transfer cutlets on a warm plate.
8. Finish sauce with butter and lemon slices. Once butter melts, pour sauce over cutlets.
Note: You can garnish it with fresh chopped parsley before serving warm.

1      pound green beans , stem ends snapped off
1     tablespoon olive oil
Instructions
1. Adjust oven rack to middle position; heat oven to 450 degrees. Line rimmed baking sheet with aluminum foil; spread beans on baking sheet. Drizzle with oil; using hands, toss to coat evenly. Sprinkle with 1/2 teaspoon salt, toss to coat, and distribute in even layer. Roast 10 minutes.
2. Remove baking sheet from oven. Using tongs, redistribute beans. Continue roasting until beans are dark golden brown in spots and have started to shrivel, 10 to 12 minutes longer.
3. Adjust seasoning with salt and pepper, transfer to serving bowl, and serve.

Eight Kitchen Cabinet Trends

It may be the start of a new decade, but some kitchen cabinet trends are timeless. “Functionality is still number one with us,” said Pat Caulfield, AKBD, VP of sales & marketing at Keener Kitchen, a full-service kitchen and bath cabinet manufacturer and design firm with showrooms in Red Lion, PA, and Timonium, MD.

In addition, value and quality are more important than ever these days. “More and more people are bargain hunting,” Caulfield said. “This is a fashion industry, so people want ornamentation—but not over the top. It’s not fashionable now to be a blatant consumer.” She added, “People want items that are well-manufactured and will last.”

On top of this perennial trifecta of trends, some new kitchen cabinetry trends have emerged. Caulfield illustrates five recent cabinet preferences with photos of kitchen designs by Keener Kitchen.

A STREAMLINE DESIGN WITH CLEAN LINES

“‘Transitional Contemporary’ is the new term,” said Caulfield. “Clients want something that will stand the test of time.” The use of heavy Tuscan-style moldings has really toned down, for example. “People still want moldings, but in an understated and traditional sense,” she said.

“Ever since the Diane Keaton movie, Something’s Gotta Give, with that great white kitchen, we’ve seen a huge surge in that style,” Caulfield said. “It’s a throwback to grandma’s kitchen—white paint, inset door, bin pulls. People are searching for a level of comfort that is a throwback to what they remember.”

“Organization and storage units are very popular [hidden] inside cabinetry,” said Caulfield, “including Le Mans corner systems, ‘mixer lifts’ and pullout tray shelves.”

“Oil-rubbed bronze, brushed stainless and nickel—these are not going away because of stainless appliances,” Caulfield said. “People are sticking with hardware that goes with those.” Bin pulls, from contemporary to traditional, are still popular, as is mixing hardware.

While homeowners may keep cabinet styles simple, they are adding interest with appliances and accessories. “Appliances are the new bling,” said Caulfield. “Microwaves, dishwashers, warming drawers—little luxuries are becoming important. A hot pink KitchenAid mixer can pop the space, but can be changed easily.”

Flooring Trends 2010

Every year at the International Builders’ Show, the latest and greatest trends in the home improvement and building industry are showcased. Because flooring is such a quick and affordable way for homeowners to update their homes, it is often one of the first projects that they will undertake. Here is a preview of some up-and-coming flooring trends that will emerge during 2010.

DARING CHOICES

In 2010, homeowners are going to be bold with their flooring selections. While maple and oak will always have a place in the home, the new decade brings a new selection of fascinating floors. By choosing unique flooring, homeowners will find a great way to bring character to a room. Any flooring with dramatic shading differences (for example, bamboo that combines both natural and carbonized strand bamboo for an exotic, tiger-like pattern) fits into this category and is just the beginning of some of the dynamic and distinctive choices now available to homeowners.

ECO-CONSCIOUS FLOORING

While “going green” has been a home trend for a few years now, the options have expanded. Retailers now offer a wider variety of bamboo and cork choices, many of which have dynamic texture and brilliant hues. Another way consumers can “go green” with their flooring is by purchasing thinner hardwood flooring, which uses up less of the tree. Thinner flooring also cuts the cost of the flooring by about 20 percent.

NIGHT AND DAY

Dark-stained flooring is another popular trend right now. There are many dark-stained bamboo options available that give homeowners a rich look within their home. This dark flooring is especially stunning in kitchens. On the other end of the spectrum, lighter flooring (almost white) is also very popular. The lighter option is typically found with a maple or hardwood floor and stained bamboos.

THICKNESS AND TEXTURE

Wide-plank and hand-scraped floors are still a big trend in flooring. The new preferred plank width is moving up to 4 to 5 in. Thinner flooring thickness has also become popular, and the current standard for hardwood flooring thickness measures around 3/4 in. More and more consumers are opting for 3/8-in. or 1/2-in. flooring for their homes. Hand-scraped floors are an overwhelming favorite for homeowners who want some added texture to their flooring. The trend continues to grow, and the options in hand-scraped flooring have expanded to accommodate the popularity of this movement. Even bamboo floors are becoming available with a hand-scraped texture.

THE LOOK FOR LESS

While the look of hardwood flooring has always been a luxury for homeowners, it no longer costs a fortune to achieve this striking look. There are many more (and believable) laminate and engineered flooring options available these days. Of course, the cost and product range of hardwood floors available now has made it much easier for more and more homeowners to obtain the flooring they desire.

SHOPPING WITH EASE

As we head into 2010, consumers looking to purchase flooring will be delighted to hear that the process has gotten much easier. Many retailers and manufacturers offer helpful resources such as do-it-yourself installation tips, online advice on selecting floors and even iPhone applications to make flooring projects easier for homeowners.

Whether dark flooring, wide flooring, bold flooring or hand-scraped flooring is your taste, the flooring trends previewed at the International Builders’ Show are sure to offer something for every homeowner.

What.. I mean, Who’s Cooking?

Most everything in our lives today are geared towards being more efficient and time-saving.  Convenience is often key in the decision making process of most everything we do.  Prepackaged & ready made food options are unlimited at the grocery stores and often times I find a dedicated kitchen drawer in my client’s homes for take-out menus.  Are home cooked meals a past time?   In my personal experience & research, sadly, by majority it seems that way.

Then on the other hand, there is a growing number of people that consider themselves “Foodies”; a person devoted to refined sensuous enjoyment of food and beverage.    A Foodie is described as someone who enjoys food, enjoys talking about food, shares recipes & restaurant experiences, and have an avid interest in knowing what the latest fads are with….. yes FOOD!  Now while I think there is nothing wrong with being a “Gourmet Cook”, this just sounds like fun..  doesn’t it?!

I consider myself fortunate.  I was raised by a SAHM (Stay at Home Mom) who taught me how to cook and yes, even bake.  Over the last 10 years I took it to the next level by subscribing to cooking magazines, blogs and recipe sharing websites.  I shifted from knowing how to cook, to trying new recipes nearly every week and really enjoy the experience!  This is one of the reasons I believe my skills as a Kitchen Designer are so strong.   It’s like a fine car, the person that appreciates them the most is a mechanic!  They admire and understand how to make them function to their optimal performance.  And just as every driver (cook) has different needs and preferences, the car (kitchen) can be built (designed) to accommodate them!

Can you have fun cooking?  If you enjoy good food, therecipe with fresh ingredientsn my answer is YES!  One instrument key I can provide to you via this blog (before or after I design and organize your kitchen!) is to provide insight to mouth-watering recipes!  Most recipes will consist of fresh ingredients and spices.  You would might be surprised how easy it is to keep a pot container for basic fresh spices!  I  keep rosemary, sage, thyme and sweet basil year round ~ all for pennies in comparison to store bought packages.    With fresh ingredients, you’ll experience the difference ~ the food tastes better and is by far better for you!  And it does not have to (always) be complicated!

Watch for upcoming posts of recipes that are tried and tested ~ roll up your sleeves ~ put on your apron ~walk in the path of a foodie (aka gourmet cook?!), and experiment the fun and satisfaction of cooking delicious meals!  You never know what you might learn!

DESIGN PREDICTIONS FOR 2010

Designers agree there will be a continued focus on green design, open floor plans with contemporary styling and the overall evolution of the kitchen from merely a space for eating and cooking to an area for entertaining and living.

Employing environmentally friendly methods in construction and remodeling, in addition to exploring more energy efficient alternatives, has increased greatly over the recent years and designers believe that the trend towards “going green” will continue.

“We have already seen an increase in awareness and interest in how the average home can be part of going green without a major expense or change in lifestyle,” said Michelle Drenckhahan, Principal Interior Designer of Spacial Adaptation.  “We will continue to see a lot of people interested in energy efficiency as well as useful and more cost-friendly ways to incorporate it into design.”

Cost has often been a deterrent for many homeowners when considering using environmentally friendly materials in remodeling.  The recent economic recession has made it even more difficult.  Not only are homeowners reconsidering what types of materials to use, but the recession has also widened the gap between people who can legitimately afford to remodel their kitchen or bath with a realistic budget in mind and the tire-kickers looking for freebies, according to Gerry Snapke of CAD Kitchen Plans.

Snapke predicts in 2010, designers will see a continuation of the move towards contemporary styles with clean lines, sleek designs and more open wall space, rather than crowding as many cabinets as possible into the kitchen.

Reducing the number of cabinets will change how cabinetry is designed and force homeowners to adapt.  Susan Serra, CKD, author of The Kitchen Designer, predicts many homeowners will seriously re-evaluate what they really need to store in their kitchens for the very first time.

Design trends will go beyond merely reconfiguring one’s space, and the role the kitchen plays in the home will continue to evolve.

The kitchen is no longer solely the room for cooking and eating but transformed into a space for entertaining and living.  Both appliance and cabinetry design have changed to reflect the evolving trend.

“Although we’ve talked about it for quite some time, we have seen a new serious appreciation and gratitude for the pleasures of cooking and socializing with friends and loved ones as a result of recent difficult times.  Simply put, more cooking and more living are being done in the kitchen and more living room-like features are being built into kitchens,” continued Serra.

Families are going out to eat less often, so appliances now provide a more robust cooking experience at home with functions that allow chefs to explore their creativity.  Pro-style ranges and cooktops, such as the Epicure® Dual-Fuel Range and the Epicure and Preference® Gas Cooktops have high-heat SimmerSear™ Burner output for cooking over a wide range of temperatures.
